Whole Wheat Banana Muffins
3 x ripe bananas
¼ cup canola oil
1 cup sugar
2 ½ cups whole wheat flour
1 tsp salt
1 tsp baking soda
Preheat 360º F
Put oil, sugar and bananas in a blender. You may want to add the bananas sliced
and one-at-a-time using the little portal in the top. Shake the blender
(carefully) if the ingredients aren't mixing well. Blend until mixture is
smooth.
In a largish mixing bowl, sift flour, baking soda and salt together. Pour in the
mixture from the blender into the bowl, and mix together. Don't whip or beat.
Once mixed, you can add chopped walnuts, chocolate chips, or other addables.
Just fold in.
Pour the mixture into a muffin pan, making sure to grease the pan lightly IF you
don't use muffin cases. Bake at 360º F for about 15-20 minutes, or until a
toothpick comes out clean.
Cool, eat. Store in a airtight container.
