Reduced Sugar Blueberry Muffins with Truvia Natural Sweetner



1-1/2 cups all purpose flour
1 Tbsp baking powder
3 1/2 Tbsp TruviaŽ natural sweetener spoonable*
1/4 cup sugar
1/4 tsp salt
1 cup skim milk
1/4 cup liquid egg substitute**
1/3 cup canola oil
1/2 tsp vanilla extract
3/4 cup blueberries; fresh or frozen

* or 12 packets TruviaŽ natural sweetener
** may substitute 1 large egg-will alter nutrition

Instructions

1. Assemble all ingredients; preheat oven to 400°F.
2. Combine flour, baking powder, TruviaŽ natural sweetener, sugar and salt in a medium bowl.
3. Combine milk, egg substitute, oil and vanilla in a large bowl. Mix until well combined
4. Add dry ingredients to egg mixture. Mix until just moistened. Do not over mix.
5. Fold in blueberries.
6. Divide batter into twelve 2-1/2 inch paper-lined muffin cups.
7. Bake for 18-22 minutes until tops are lightly browned.
