SOURDOUGH APPLE-NUT MUFFINS
1 ½ cups all purpose flour
1/4 cup sugar
2 teasp baking powder
½ teasp salt
3/4 teasp ground cinnamon
1 egg, well beaten
½ cup dourdough starter
2/3 cup milk
1/3 cup cooking oil
1 cup grated apple, not peeled
½ cup chopped nuts
Stir together flour, sugar, baking powder, salt, and ground cinnamon. Make a
well in center of dry ingredients. In a separate bowl mix together egg,
sourdough starter, milk, oil, apple and nuts. Add starter mixture all at once to
well in dry ingredients. Stir just until moistened. Fill greased muffin pans 2/3
full. Bake at 400 F (205 C) for 20 to 25 minutes or until done. Makes 12
muffins. (If you double this recipe, be sure to return right amount of starter
to the original mixture.)
