Spinach Wrapped Grouper

 


10 fresh basil leaves
1/4 cup fresh chopped spinach
2 tbsp chopped parsley
1 tbsp sliced almonds
1 medium garlic cloves , minced
2 tsp olive oil
2 tsp fresh lemon juice
1/4 tsp salt
1/4 tsp black pepper
4 Fish, grouper, mixed species, fillet, raw (about 5 ounces each and 1 1/4 inches thick)
20 fresh spinach leaves , tough stems removed
1 fresh lemons , sliced into 12 thin circles



Directions
1 Preheat oven to 375 degrees F.
2 Add the basil, spinach, parsley, almonds, garlic, oil, lemon juice, and 1/8 teaspoon of salt into a blender or food processor and pulse to blend.
3 Sprinkle the remaining 1/8 teaspoon of salt evenly on grouper, then top each with a dollop of pesto.
4 Place 5 spinach leaves on a paper towel and microwave until spinach wilts but is still bright green in color, about 15 seconds on high.
5 After spinach slightly cools, place 3 of the leaves on a cutting board or flat surface, overlapping them a little. Top leaves with a fish fillet and cover fish with remaining 2 spinach leaves. Fish should be covered completely with the spinach. Using your fingers, press bottom and top spinach together to seal in fish and place on a baking sheet lined with foil or parchment paper. Repeat with remaining spinach leaves and fish. Top each spinach wrapper fish with 3 lemon circles, overlapping them slightly.
6 Bake until fish is firm to the touch, about 15 minutes.


Additional Information
You can use any firm, white fleshed fish in place of the grouper.
